Simmer–Simmer, Yummy Forest Time

Ricky the squirrel, Uoo-chan the rabbit, and Koo-chan the bear slowly simmer their dishes in a sweet-and-salty sauce.

Ricky’s Shiny Forest Nut Tsukudani Show. Acorns, walnuts, cashews, raisins, and cranberries sparkle in a sweet-and-salty syrup. “The secret is drops of maple syrup from the forest. It brings toasty flavor and gentle sweetness together,” he says. “Try it on yogurt—or on pancakes!” he smiles, offering a cracker.

Uoo-chan’s Fluffy Veggie Garden Review. She simmers cabbage, lotus root, and burdock root in a small pot with broth. “Even the sad little bits hiding in the corner of the fridge become a feast this way,” she giggles. “Rice balls? Omelets? Sandwiches? They’re all ready to dive right in!” she hops.

Koo-chan’s Hearty Mountain Harvest Tale. He finely chops crispy grilled salmon skin, mushrooms, fern shoots, and bamboo tips, then simmers them in soy-koji. Steam drifts up… “On warm rice, it tastes like a mountain morning. On udon noodles, it tastes like a forest evening,” he whispers. And then softly: “By itself… it’s the perfect companion for sake at night.”

Today, June 29, is Tsukudani Day. With gentle simmering, heartfelt flavors, and soft smiles, the night quietly came to an end.

Today’s Key Word: Tsukudani
Tsukudani (佃煮 / Tsukudani): Small pieces of food—like seaweed, fish, or nuts—slowly simmered in a sweet-and-salty sauce (usually soy sauce and sugar).
